Aged Dark Balsamics
The Elevated Olive dark balsamic condimento is of the highest quality and is made in Modena, Italy in the traditional style from cooked, carmelized Trebbiano grape must. The must is cooked over an open wood fire in the copper kettles and then aged using the Solera system. Each of the dark balsamics is aged at least 12 years and are PGI (Protected Geographic Indication) 4 Leaf Quality.
White Balsamics
Our white balsamic vinegar is made from white Trebbiano grape “must” and is cooked at a low temperature to avoid darkening. The must is then aged in wood barrels to create a tart, crisp product.
